Three things make a carcase worth knowing. We don't add a fourth, and we don't take one away.

Native pasture, kikuyu and clovers.

The cattle eat what the country grows — every day of the year, no grain, no shortcut. The flavour is the country's flavour; we just don't get in the way of it.

Months on pasture

Time.

Twelve to eighteen months, milk-tooth.

Angus × Charolais, single mob. Dressed weights sit between 180 and 220 kilograms HSCW — small carcases, unhurried.

Paddock receipt

Place.

Every box ships with the receipt.

Paddock, break date, dressed weight, the cuts inside. If the receipt doesn't say it, we don't say it. Hand-numbered, founder-signed.

Operational truth

The receipt is the source of truth.


The paddock receipt rides inside every box — the paddock the animal ran on, the breed, the age at break, the dressed weight, and the cuts inside. If a fact isn't on the receipt, it doesn't appear in our copy.

One mob. One station. Every line traceable to the carcase it came from — hand-numbered, founder-signed, foil-blocked on the Premium tier.

The mob rotates across six named paddocks through the year, watered by Mulla Mulla and Cooee Creeks. Each animal is tagged to the paddock it broke from — that's the line on your receipt.
